2023 Sta Rita Hills Rosé of Syrah - Upsilon

Soil. Vines. Wines.  This is the order in which great wine is made.  Our little firecracker is an intentional flirt with a dash of grenache and dollop of riesling.  Ampelos is the Greek word for vine.  The relationship we have with our land is paramount in producing minimally invasive wines that showcase the terroir from which it is grown.  The evidence is in every delicious sip.

Wine Making Style

• Our overall rose style is to keep the ripe flavor of the syrah grapes alive and allow for the natural aromas and flavors to come forward.
• A third of the cuatro vientos and the estate syrah was de-stemmed, crushed and cold soaked for 5 days to give it the beautiful glowing pink color and a deep red-wine alike mouth feel with light tannins
• From 2011 we have not been using commercial yeast for fermentation – but rather let mother natures wild yeast do the job.  we had 10 different batches in stainless steel tanks and barrels and they began a long, cold and slow fermentation – average fermentation time was around 28 days
• None of the batches were in contact with oak and they did not go through the second (malolactic) fermentation. before bottling did the blending of the components, fined and filtered them
• To reduce our energy use we have replaced the electricity hungry, traditional cold stabilization with a product based on manoproteins – the results are amazing and we feel even more “green” by doing so
