2016 Late Harvest Viognier Desert Wine (375ml)
Soil. Vines. Wines. This is the order in which great wine is made. Ampelos is the Greek word for vine. The Greek symbol Epsilon: “the special” is used mathematically to symbolize a very special desert wine. She is one of a kind and doesn’t make appearances often.
Wine Making Style:

The wine making goal for the viognier is to retain the flavors of the freshly picked fruit and not to mask it with oak or other distracting components

Fermented in small stainless steel barrels utilizing the natural wild yeast that come in on the grapes

The fermentation is kept around 50 degrees for about five weeks until the sugar was around 10 brix

We halt the second (malolactic) fermentation – that way we keep the minerality as well as the crispness of the fruit in the wine
