Soil. Vines. Wines. This is the order in which great wine is made. Ampelos is the Greek word for vine. The Greek symbol Epsilon: “the special” is used mathematically to symbolize a very special desert wine. She is one of a kind and doesn’t make appearances often.

Wine Making Style:

  • The wine making goal for the viognier is to retain the flavors of the freshly picked fruit and not to mask it with oak or other distracting components
  • Fermented in small stainless steel barrels utilizing the natural wild yeast that come in on the grapes
  • The fermentation is kept around 50 degrees for about five weeks until the sugar was around 10 brix
  • We halt the second (malolactic) fermentation – that way we keep the minerality as well as the crispness of the fruit in the wine
